Crema Kitchen: Pasta Perfection

It is quick and relatively easy to make a cream sauce for pasta or any number dishes. Here's how to make a rich creamy base can then take advantage by adding additional flavors.

Mix the liquid over low heat until the flour mixture and allow to dissolve thickens. The flour for baking should eliminate this flavor. Do not boil – the cream will curdle. Keep the temperature low.

When cream sauce is ready, you can add cheese, sautéed vegetables, greens, tomatoes, meat, herbs and spices to create different a variety of sauces. Here's an idea to start.

Chicken Alfredo Easy

Ingredients

  • 400g pasta (spaghetti, macaroni, shells, or links work well)
  • 1 tablespoon cooking oil
  • 4 tablespoons tablespoons butter
  • 1 kg chicken breasts, cubed
  • 1 onion, chopped
  • 400g mushrooms, sliced or diced
  • 1 teaspoon chopped garlic
  • 2 cups milk
  • 2 tablespoons flour
  • 1 cup Parmesan cheese grated
  • 150ml cream, thickened
  • 100g green vegetables (broccoli, spinach, peas, etc.)

Preparation
Boil a large pot of water with a pinch of salt and a tablespoon of cooking oil (the oil makes the pasta from sticking together). Add pasta to boiling water and cook until al dente, drain, rinse and set aside.

While cooking pasta in a large skillet over medium heat, melt 2 tablespoons butter and add garlic, mushrooms and onions. Sauté the lot until the onions are translucent. Add chicken pieces and fry until it loses its color dew.

Remove the chicken, garlic, mushrooms and onions in the pan or move sideways. Add remaining 2 tablespoons butter and melt. Add flour and mix with melted butter. heat until the flour is cooked and taste the dust are gone.

Over a low heat, gradually add the cream and milk to the mixture of cooked flour. Add Parmesan and let the sauce thickens. Add chicken and mushrooms mixture into the sauce. Mix well. Add vegetables and heat through. Put the pasta in alfredo sauce dishes and sponsors of chicken on pasta. Eat and enjoy!

This recipe can be modified to an alfredo-type of lasagna. Prepare the sauce with garlic sautéed onions and mushrooms but leave out the chicken. Cook the chicken separately and add a dash of Italian seasoning. When the sauce is ready, spoon a small amount in the bottom of a 9×13 baking pan. Place a sheet of lasagna quick cooking on top. Add a layer of chicken and a spoonful of sauce over chicken. Add another layer of lasagne and repeat the layers until the container is covered with a layer of sauce. Sprinkle cheese additional Parmesan on top and bake for 45 minutes at 175C (350 F or gas mark 4). Stand for five minutes after cooking, then cut and serve with a salad. Yum
