Chestnut Chicken
Makes 4 servings

10 Meat ½, 3 starch, 1 ½ fat, 1 vegetable, 1 fruit, 1 sugar
108g protein
Contents 65g fat
106g carbohydrates

Ingredients
1 small chicken (cut into 16 pieces)
2 tablespoons oyster sauce

1 tablespoon sesame oil
5 slices ginger
5 cloves garlic (crushed)
15 chestnuts dried (boiled until tender and remove the skin)
10 Chinese mushrooms (soaked)
12 dates in red
1 carrot (sliced)

For seasoning:
¼ cup rice wine
1 tablespoon light soy salsa
Black pepper
2 v. Tea cornstarch
1 ½ cup water

Levy:
Onion and parsley (cut into 2 cm long)

Cooking methods:
Marinate chicken with oyster sauce for 30 minutes and drain. Set aside.

In a large saucepan with oil-sesame, garlic and ginger and fry until browned. Add chicken pieces and continue to sauté until they lightly browned. Add the chestnuts, dates, carrots and mushrooms and continue stir-frying. Add sesoning, cover and simmer for about 10 minutes.

Garnish with chives and parsley.

Chicken Korma

4-6 servings

Ingredients
1 small chicken (1 kg) cut into chunks

1 cinnamon stick
3 cloves
2 v. tsp white pepper
2 tablespoons coffee anise
1 tsp tablespoon whole cumin
½ teaspoon turmeric powder
A thumb-sized ginger
5 cloves garlic
4 medium onions
5 pieces of candle nuts

1 cup coconut milk
Water 1 ½ cups
Salt to taste

Cooking methods:
Dry Fry cinnamon, cloves, peppercorns, anise, cumin and turmeric in a saucepan, heat the pan until spices are fragrant but not brown. Grind the spices into fine powder in a coffee grinder. Set aside.

Mix ginger, garlic, onion and nuts candle in a food processor. Boil the coconut milk in a nonstick wok until separated oil, sautéed onions, ginger and garlic in coconut oil until golden. Mix the spices and cook gently for 3 minutes.

After that, add the chicken, stirring frequently for about 5 minutes. Then, add water and simmer the pieces chicken until tender in the open air.

Gradually add the remaining coconut milk. Serve hot.

  • I’m so worried about the direction our children are heading in nowadays. Watching Jamie Olivers food revolution tv show scared the thingies out of me. I suggest we all start cooking some healthy recipe like these at home if we’re going to fix this horrible situation. The ones on that site seem pretty easy, I tried last night and it’s the first time my family has eaten healthy in ages, I just feel great.
