LIGHT meatloaf August

Ingredients

1 kg beef

1 can (6 oz) tomato paste

1 / 2 c. Oatmeal

3 c. soup. Green pepper, finely chopped celery or

2 v. soup. Bran

2 v. soup. Wheat Germ

1 cm. Onion minced

1 tsp soup. Fresh parsley

1 egg, lightly beaten

1 / 4 c.. Minced garlic

1 / 2 CC. Salt

1 / 4 c.. Freshly ground

chili sauce

Instructions

Preheat oven to 350 degrees. Mix all the ingredients of bread with your hands. Form into a mold and place in 9 X 3 5 X mold covered with a layer of chili sauce (or tomato sauce if desired) Bake 50 minutes to 1 hour. (Do not over bake as one of the secrets of the sponge is cooking time.) Serve the slices of meatloaf and hot. Yield 4 servings. Variation: Half of ground beef and half ground beef can be used for meatloaf – low in calories.

SALAD SPICY CHICKEN

Ingredients

4a. Chicken breast halves, broiler / fryer, boned, skinless

1 / 2 tsp Dressing, bottled, ranch, fresh (similar work in fat with recipes for chicken salad as well)

2 v. soup. Salsa, spicy

1 tsp tea. chili powder, divided

1 / 4 c.. Salt

1 tsp soup. Oil, vegetable

4 c. Lettuce, mixed, spread sparsely

1 Med. Avocado, peeled, halved, seeded, cut into horizontal slices

1 Med. Red onion, thinly sliced into rounds

2 med. Tomatoes, cut into 8 wedges each

2 v. soup. Cilantro, chopped or

2 v. soup. Parsley

Instructions

In a small bowl, combine dressing, hot sauce and a teaspoon 1 / 2. chili powder to one side. Mix remaining c. Tea 1 / 2. chili powder salt and sprinkle over chicken. Heat oil over medium-high heat in a skillet. Add the chicken and cook, turning, about 8 minutes or tender until browned and fork. Remove the chicken on a cutting board and cut horizontally into 1/2-inch slices. Place one quarter of the lettuce in four serving plates. On each plate, arrange sliced half chicken breast on lettuce. Place avocado, onion and tomatoes around the chicken. Sprinkle 2 tablespoons. dressing on each salad. Sprinkle with cilantro or parsley, if desired (works well with many recipes of light). Pie Pumpkin Light

Ingredients

3 eggs, beaten

1 / 2 c. Firmly packed brown sugar

1 tsp soup. Honey

1 tbsp. ginger

1 tsp tea. Cinnamon

1 9-inch deep-dish frozen pie, Shell, thawed

1 can (16 ounces) pumpkin

6 pkg. Envelopes Calorie Sweetener

1 tsp tea. Nutmeg

1 1 / 2 tsp Skim

Whipped Cream

Orange peel

Instructions

Preheat oven 350 F. 2. In a medium bowl, combine the milk.

Gradually add milk. Pour into pie shell and bake for 70-80 minutes or until what knife inserted halfway between center and edge comes out clean. Let cool and garnish with sliced 2 c. soup. whipped cream and orange zest grated.

Finally convinced my mother to buy tofu for me. ((I'm vegetarian, and I think finally starting to agree with him … It is not exactly the most favorable.
