My aunt gave me a million giant home-grown tomatoes and I won’t be able to eat them all before they go bad. I want to make this soup, but can I substitute fresh tomatoes for canned?? If so, how?

Of course you can!
Blanch the tomatoes by dipping them into some boiling hot water for about 10-15 seconds. The peel will slid off of the tomatoes.
Just guesstimate how many tomatoes you need. By looking at the recipe, you will probably use 5-6 medium sized tomatoes. Of course, it is your soup……..so use however many you want.
You can also can the tomatoes or just wash and freeze them. If you freeze them, just put them into a ziploc bag and put in the freezer. They are great for cooking with later as the peel will just slide off as the tomato defrosts. They are kind of mushy when you thaw them out, but they cook up just fine.
